CAVU Kitchen Bar opens in Richmond


I recently attended the launch party of the new CAVU Kitchen Bar in Richmond, British Columbia located at the Vancouver Airport Hilton. (Must start by noting the gorgeous ice sculpture martini luge sitting on CAVU's bar, carved especially for the launch party, gorgeous!)

Seeking to bring a great dining and cocktail experience into Richmond, the brains behind CAVU have created an inviting space and electic, flavourful menu that caters both to Richmond locals and visitors to the area - be it by air on the way to and from nearby Vancouver International Airport, or by ferry like myself from Vancouver Island.

The launch evening packed CAVU to the rafters, but the bright and modern space still had lots of room to hold us all. There are open areas perfect for large groups to enjoy cocktails and appetizers, as well as quiet booths and nooks here and there.

Showcasing 'small bites' version of some of CAVU's new menu items, the chefs were a blur all evening as they prepped and served a mountain of appetizers using high-end ingredients and Canadian-made and BC-grown specialty foods and produce.

I was particularly fond of the Prime Rib Sliders on brioche - one topped with lobster and mornay sauce, the other topped with Applewood smoked cheddar (I love that cheese!), black forest bacon and port wine roasted onions. It was also nice to see support for Vancouver Island-made products, with the entire line of cheeses from Parksville's Little Qualicum Cheeseworks featured on CAVU's cheese and charcuterie platter for the launch evening.


CAVU's bar menu features classic cocktails and a nice selection of BC wines including Sandhill Single Vineyard Wines from the Okanagan, who were on site pouring their latest vintages for guests.The bartenders were mixing up CAVU's signature Wine Caesar made with Walter Craft Caesar Mix (a Canadian-made product).

Red Truck Beer Company was also on hand with samples of their Vancouver-made beers which are on tap at CAVU. I fell in love with Red Truck's IPA that night and I'm looking forward to trying it again soon.


I had a great time at CAVU's launch. Richmond locals are lucky to have such a great new spot to eat, drink and socialize right at their doorstep, and visitors passing through the area will surely enjoy the relaxing (and flavourful!) escape from travel stress that CAVU Kitchen Bar provides.
