Chewy Peanut Butter Cocoa Cookies

I am a chewy cookie lover and I'm always seeking out recipes for a cookie that stays moist and chewy, but still has great flavour and nicely crisped edges. Finally - success!

I've been working on variations of this Chewy Peanut Butter Cookie recipe to find the perfect combination of chewy, softy and peanut buttery-ness. Once I finally nailed the recipe down, though, I was hard-pressed to get a good picture of these cookies before they disappeared from the counter (or more often, the cooling rack straight out of the oven). My husband and son are devoted product testers, devoted to a fault...

Lucky for them, these cookies are quick and easy to make in one bowl with ingredients that are usually already stocked in everyone's cupboard. They have a great chewy texture and flavour that combines peanut butter with hints of cocoa and brown sugar.

Chewy Peanut Butter Cocoa Cookies


1/2 cup butter, softened

1 cup of smooth peanut butter

1/2 cup white sugar

1/2 cup brown sugar

1 egg

2 tablespoons milk

1 teaspoon vanilla

1 cup all purpose flour

1/4 cup cocoa

1 teaspoon baking soda

1/4 teaspoon salt


Pre-heat oven to 350 degrees

Beat butter and peanut butter in a large bowl with a hand mixer until smooth

Add white and brown sugars and beat until smooth

Add egg, milk and vanilla and beat until smooth

Sift all dry ingredients into the bowl - flour, cocoa, BS & salt

Stir with a spoon until dough is fully combined, don't overwork the dough which will be quite soft

Drop by the spoonful onto a parchment-lined or greased cookie sheet

Cookies will flatten during baking, but pressing the dough down with a fork before they go into the oven insures an even bake.

Bake for 12 minutes, then let rest on the baking sheet for two minutes before transferring to a wire rack to cool.
