Happy Windset Wednesday! The sun is shining out here on the west coast and it's time for a cucumber-based fruit smoothie with blueberries, pineapple and kale. Feel Good Cucumber Fruit Smoothie

Makes two servings

Ingredients

2 Windset Fresco Cucumbers

1 cup frozen blueberries

1 cup frozen pineapple chunks

1 cup fresh kale leaves

1 cup apple cider or juice

Roughly chop the cucumbers and kale leaves, combine with frozen blueberries, pineapple and apple juice/cider and puree with a blender or hand blender until smooth and thick.

Devour.
