Feel Good Cucumber Fruit Smoothie

Happy Windset Wednesday! The sun is shining out here on the west coast and it's time for a cucumber-based fruit smoothie with blueberries, pineapple and kale. Packed with antioxidants, vitamins and detoxifiers with no added sugar, this smoothie is also naturally gluten & dairy free and vegan/vegetarian friendly.

I love Windset Farm's Fresco Cocktail & Mini cucumbers, grabbing a few right out of the fridge as an afternoon snack has become a regular habit in our house, and these crunchy little cukes pair with just about any salad you can think of.

But a cucumber-based smoothie, you might wonder? Oh yes, this is well worth trying out and the flavour will hook you right away. The fresh cucumbers and kale blend and disappear into the frozen sweetness of the blueberries and pineapple chunks, and the smoothie turns to an eye-catching deep purple. The rich colour also might help you sneak this healthy serving of cucumbers, kale and fruit into the stomachs of picky eaters who may reject a visibly 'green' smoothie.

Lightning fast to whip up, this smoothie is a good start to the morning, a post-workout re-energizer or re-hydrating hangover cure to recover from a fun night. Greenhouse-grown Windset Farms Fresco Cucumbers are fresh and ready to eat in stores now, go grab some and get your smoothie on.
