Honeycomb Brittle and Butter Baked Goods Giveaway


Oh, I've been looking forward to this one for a while... It's time for the Butter Baked Goods Cookbook Roundup and Giveaway!

A diverse group of food bloggers from across Canada have been pouring over the pages of Butter Baked Goods - Nostalgic Recipes from a Little Neighbourhood Bakery. This home baker's dream cookbook is crammed with over 100 recipes for sweet confections and baked desserts.

Now we're all sharing our personal experiences making a variety of Butter Baked recipes, featuring photos of what we created and jointly hosting a giveaway for you to win a personally signed Butter Baked Goods Cookbook of your own along with a box filled with goodies from the tiny yet famous Vancouver bakery with a prize value of $125 (open to both Canada and the US, entry below).

This delectable cookbook written by Rosie Daykin features over 100 recipes for sweet favourites, bakery classics and even the highly-coveted Butter Baked Marshmallow recipe, recreating the bakery's iconic gourmet marshmallows that are sold all across North America. There are also baking technique breakdowns, information on how to whip, mix, cut and zest and all the right tools to select for each task.

When choosing which recipe I wanted to try from Butter Baked Goods, I wanted to test my limits with techniques that I'm still a newbie at, so I decided to go for candy making with the Chocolate Honeycomb Brittle recipe on page 247. This recipe describes how to make a puffy and crunchy honeycomb brittle candy and uses the chocolate tempering techniques from Page 234 for the dark chocolate coating.

I found making this chocolate honeycomb brittle both entertaining and informative - things bubble, foam, melt, harden... there's suddenly melted dark chocolate everywhere. It's good times, and at the end you have candy!

I also like that while there are specific techniques spelled out in the recipe that need to be carefully followed, the resulting candy is heart-warmingly rustic in appearance, and you can choose to break up the brittle into bite-sizes snacking pieces or make larger candy 'bars', reminiscent of the Crunchie chocolate bars of childhood, but with tons more flavour, texture and crunch. This dark chocolate brittle would also look lovely wrapped up and festively packaged for seasonal giving.

Whenever I make anything with chocolate, there's ALWAYS suddenly melted dark chocolate everywhere. hahahaha... Like, EVERYWHERE. Even places you don't want to find chocolate. And this goes on for days. If whatever I'm making ends up tasting half as good as these honeycomb brittles though, I'm okay with that.
