Lemon-y Basil Hummus Dip

The season of sunny cocktail parties, backyard barbeques and beach-side picnics has begun. If you're in a rush and need a quick appetizer to whip up for a get-together, this simple to make Lemon-y Basil Hummus Dip is for you.

Light and fresh with a citrus zing, this dip pairs well with bagel chips, pita, tortillas or a veggie platter. Fresh basil pureed into the hummus enhances the flavour and colour of this easy summer appetizer.

Lemon-y Basil Hummus Dip

Ingredients

One can of chickpeas (398ml medium-sized), drained and rinsed

1/2 cup fresh basil leaves (use a full cup of basil for a vibrantly green and flavourful version)

1 clove of garlic , pressed or fine chopped

juice of 1 and a half fresh lemons

2 tablespoons extra virgin olive oil

sea salt and pepper to taste


Using a food processor or blender, puree all the ingredients until smooth, adding extra olive oil 1 tablespoon at a time if needed for desired texture. 

Devour.
