Spanish Chorizo and Mushroom Tapas with Mushrooms Canada

I'm happy to back as a guest blogger this month with Mushrooms Canada, focusing on the classic mushroom we all know and love -the white button mushroom. I'm taking this simple mushroom and transforming it into a Spanish-inspired tapas using chorizo sausage, inspired by the colours of autumn and the harvest season. The chorizo oils from the sausage infuse these succulent mushrooms with paprika-spiked flavour and turn them a bright orange hue as they caramelize along with tiny pearl onions.
