Buffalo Chicken Lettuce Wraps

It’s almost time for Superbowl watching (and snacking), and I’ve got a new recipe for your game day appetizer menu – Buffalo Chicken Lettuce Wraps using Windset Farms Delicato Living Butter Lettuce. All the flavours of your favourite buffalo wings wrapped up in a healthier yet tasty package that keeps that spicy sauce off your fingers and your eyes on the game (or on the commercials, or the buffet table - everyone enjoys the Superbowl in their own way). They're also naturally gluten-free without tasting that way, so everyone eats happy.

 

Windset Farms Delicato Living Lettuce comes packaged in a protective case, and when opened it fluffs out into a beautiful, velvety bloom of perfectly-sized lettuce ‘cups’ that are surprisingly sturdy and can hold a tasty pile of toppings. As a 'living lettuce', the Delicato arrives with its root ball intact, ensuring the lettuce stays crisp and fresh until you need it. 

This Buffalo Chicken Lettuce Wrap recipe calls for pan-cooked fresh chicken breasts, but if you've got the time, try this Crock Pot Buffalo Chicken Recipe for overnight slow-cooked chicken that's tender and ready for your lettuce wraps at game time.

The wraps can be pre-made and plated for your guests, or set out on a buffet table as a 'Make Your Own Buffalo Lettuce Wrap' station for adventurous snackers. The thin-sliced carrots and celery add extra crunch and protect the lettuce from being wilted by the warm buffalo chicken. Crumbled blue cheese gives these wraps that classic 'pub wings' flavour, but feel free to substitute feta or omit if desired if you're not a blue fan. If you've got any spicy-sensitive guests on hand, garnish with a dollop of sour cream to sooth that tasty burn (thanks to Jessica for this tip who tested this recipe with her family).

 

Buffalo Chicken Lettuce Wraps

Ingredients

2 fresh chicken breasts, boneless and skinless

1 tablespoon canola oil

1 Windset Farms Delicato Butter Lettuce

4 tablespoons butter

1/2 cup Franks Red Hot Sauce (or your fav hot sauce of choice)

2 carrots

2 celery stalks

1/2 cup blue cheese, crumbled

Optional garnishes - crispy fried onions, sour cream, fresh chopped green onion

Begin by cooking the chicken - heat a frying pan on medium heat, add the canola oil and chicken breasts. Cook for 10-12 minutes with lid on, flipping over once halfway through cooking. When the chicken breasts are fully cooked, set aside on a plate to rest while prepping the vegetables. Give the pan a quick clean to get it ready for cooking the buffalo sauce.

 

Pull the butter lettuce leaves off the main stem and wipe away any dirt with a damp paper towel. Set aside. Peel carrots and wash celery, then use a vegetable peeler to slice carrots & celery into a pile of thin strips. Using two forks, pull the chicken breasts apart into a pile of chunky shreds.

Set the frying pan back on medium heat and add the butter and hot sauce. Cook for 2-3 minutes while stirring with a whisk until the buffalo sauce is smooth and thickened (reduce heat if needed to keep sauce at a simmer while cooking). Add the shredded chicken and toss for 2 minutes until fully coated. Set aside to cool slightly.

To plate your Buffalo Chicken wraps, place lettuce 'cups' on a platter, add carrots and celery, then add a layer of shredded buffalo chicken and top with the crumbled blue cheese.

To create a Make Your Own Lettuce Wrap Station for your party, plate the lettuce, carrots & celery and chicken on a platter along with garnishes (crispy fried onions, sour cream, different crumbled cheeses, bacon bits) so guests can have a little fun creating their perfect wrap.
